Musakhan Rolls are a delicious dish with rich nutritional value and a simple preparation process. It takes around 50 minutes to prepare and another 45 minutes to cook. This recipe serves four people. Here’s how to prepare this delightful dish:
Ingredients for Musakhan Rolls:
For the Chicken:
- 1 whole large chicken.
- Cloves (to taste).
- 1 bay leaf.
- Cardamom pods (to taste).
- 1 cinnamon stick.
For the Musakhan Filling:
- 5 medium-sized onions, sliced.
- 1/2 cup olive oil.
- 5 tablespoons of sour sumac.
- 1 teaspoon black pepper.
- 1/2 teaspoon mixed spices.
- Salt (to taste).
- Saj bread (as needed).
Steps to Prepare Musakhan Rolls:
Cooking the Chicken:
Boil the chicken:
- In a large pot, place the chicken along with the cloves, cardamom, cinnamon stick, and bay leaf. Add enough water to cover the chicken.
- Bring the pot to medium heat and cook until the chicken is fully cooked.
Shred the chicken:
- Once the chicken is cooked, remove it from the pot, discard the bones and skin, and shred the meat into slices.
Preparing the Musakhan Filling:
Sauté the onions:
- In a separate pot, heat 1/2 cup of olive oil over medium heat.
- Add the sliced onions and stir until they soften.
Add the chicken and spices:
- Add the shredded chicken to the onions, along with salt, mixed spices, and black pepper.
- Stir the mixture well to combine.
Add the broth:
- Pour 1 cup of the chicken broth (from boiling the chicken) into the mixture. Bring to a boil, then reduce the heat and let it simmer until most of the liquid evaporates.
Add the sumac:
- Stir in the sumac and mix well. Remove the pot from the heat.
Assembling and Baking the Musakhan Rolls:
Prepare the rolls:
- Take the Saj bread, and place a portion of the Musakhan filling onto it. Roll the bread tightly into a cylindrical shape and brush with a little olive oil.
Bake the rolls:
- Place the Musakhan rolls onto a greased baking tray.
- Preheat the oven to 180°C (350°F). Once preheated, place the tray in the oven and bake, turning the rolls occasionally, until they are golden brown on all sides.
