  • 4 tablespoons of lemon juice
  • 2 fish stock cubes
  • Vegetable oil (as needed)
  • 3 cups of rice
  • ½ teaspoon of saffron
  • 5 cups of water

How to Prepare Muttabaq Zubaidi Kuwaiti:

  1. Marinate the Fish:

    • Place the zubaidi fish in a large bowl. Season with salt, 1 tablespoon of turmeric, and lemon juice.
    • Mix the fish with the marinade and set it aside for at least two hours to absorb the flavors.
  2. Prepare the Rice:

    • Heat a small amount of vegetable oil in a pot over medium heat. Add the chopped onions and fish stock cubes, stirring until the onions turn golden.
    • Add the rice and pour in enough water to cover all the ingredients.
    • Add the ginger, saffron, salt, cardamom, cinnamon sticks, and the remaining turmeric.
    • Cover the pot, lower the heat to simmer, and cook until the rice is fully done, then remove from heat.
  3. Cook the Fish:

    • Heat oil in a separate pot over medium heat. Fry the marinated zubaidi fish until fully cooked and golden brown on both sides, then remove from heat.
  4. Assemble the Dish:

    • Transfer the cooked rice to a serving platter. Arrange the fried zubaidi fish on top of the rice.
