  • 3 medium-sized onions, finely chopped.
  • 1 head of garlic, peeled and minced.
  • 400 grams of beef, cut into large cubes.
  • 1 bunch of finely chopped cilantro.
  • ⅔ cup of vegetable oil.
  • 1.5 liters of water.
  • 2 tablespoons of tomato paste.
  • ¼ cup of lemon juice.
  • 1 kilogram of okra (trim the tops).
  • Salt (to taste).
  • Black pepper (to taste).
  • 3 cinnamon sticks.

Preparation Method:

  1. Sauté the Onions:
    Heat ⅓ cup of vegetable oil in a pressure cooker over medium heat. Add the chopped onions and sauté, stirring occasionally, until they become soft.

  2. Add the Garlic:
    Add the minced garlic and continue stirring for about 5 minutes.

  3. Cook the Meat:
    Add the beef cubes to the pot, stirring occasionally until the meat changes color. Then, add the chopped cilantro and stir for another 2 minutes.

  4. Add the Liquids and Spices:
    Pour in the water and lemon juice. Add the cinnamon sticks, tomato paste, black pepper, and salt. Stir the mixture until all the ingredients are well combined.

  5. Cook the Okra Separately:
    In a separate pan, heat the remaining vegetable oil over medium heat. Add the okra and sauté, stirring occasionally, until it softens slightly.

  6. Combine the Ingredients:
    Add the sautéed okra to the meat mixture in the pressure cooker. Seal the pressure cooker and bring the mixture to a boil. Once it begins to steam, reduce the heat to low and cook for an additional 15 minutes.

  7. Serve:
    Once done, release the pressure from the cooker and transfer the stew to a serving dish.
