For the Shuwa:

  • 2.5 kg lamb leg
  • Banana leaves (as needed for wrapping)

For the Marinade:

  • 10 cloves of garlic
  • 2 teaspoons of ground black pepper
  • 1 tablespoon of ground cumin
  • 2 teaspoons of ground coriander
  • 1 tablespoon of ground turmeric
  • 1 teaspoon of ground cloves
  • Red chili powder (to taste)
  • 4 tablespoons of vegetable oil
  • 3 tablespoons of red vinegar
  • 3 tablespoons of lemon juice

For the Rice:

  • 3 cups of soaked and drained rice
  • 1 ¼ cups of water
  • 3 tablespoons of oil
  • 1 tablespoon of whole cumin seeds
  • 1 teaspoon of black pepper
  • 4 cardamom pods
  • 3 cloves
  • 1 cinnamon stick
  • 2 star anise
  • 4 bay leaves
  • Salt to taste
  • 2 teaspoons of ground turmeric

How to Prepare Omani Shuwa in the Oven:

Preparing the Shuwa:

  1. Marinate the Lamb:

    • Make small incisions in the lamb leg.
    • In a large bowl, mix all the marinade ingredients until well combined.
    • Rub the marinade generously over the lamb, making sure to coat the incisions as well.
    • Wrap the lamb in banana leaves and refrigerate it overnight to allow the flavors to develop.
  2. Cook the Lamb:

    • Preheat the oven to 120°C (250°F).
    • Place the marinated and wrapped lamb in a deep baking tray, cover it, and place it in the oven.
    • Cook the lamb for 4 hours, basting with its juices every 30 minutes and turning it over every hour to ensure even cooking.
    • After 4 hours, increase the oven temperature to 180°C (350°F) and cook for an additional 20 minutes, turning the lamb occasionally until fully roasted and golden on both sides.

Preparing the Rice:

  1. Cook the Rice:

    • In a pot, heat the oil over medium heat and add the whole cumin, black pepper, cinnamon stick, cloves, star anise, salt, and bay leaves. Stir for 30 seconds.
    • Pour in the water and bring it to a boil, then add the soaked rice.
    • Cook the rice until it is done, then remove from heat and take out the star anise.
  2. Flavor and Layer the Rice:

    • Take half of the cooked rice and mix it with ground turmeric until the rice turns yellow.
    • Layer the turmeric-colored rice with the remaining white rice, mixing them gently to create a marbled effect.
