  • 8 large eggs
  • 1/4 cup of chopped basil
  • 500 grams of potatoes, peeled and cut into small cubes
  • 1 cup of fresh mushrooms, sliced
  • 1/2 cup of red bell pepper, sliced
  • 1 cup of green peas
  • 1 medium onion, sliced
  • Salt to taste
  • Black pepper to taste
  • 1 cup of grated mozzarella cheese
  • Chopped green onions (for garnish, as desired)
  • Vegetable oil (as needed)

How to Prepare Oven-Baked Omelette:

  1. In a large bowl, whisk together the eggs, salt, black pepper, and chopped basil until well combined.

  2. Heat a small amount of vegetable oil in a pan over medium heat. Add the potato cubes and stir occasionally until they turn golden brown.

  3. Remove the potatoes from the pan and set them aside. In the same pan, add a little more vegetable oil and heat it.

  4. Add the sliced onions and sauté until they soften.

  5. Add the red bell pepper slices and peas, stirring occasionally for about 5 minutes.

  6. Remove the pan from the heat, add the fried potatoes back in, and pour the egg mixture over the vegetables. Stir gently until all the ingredients are combined.

  7. Pour the mixture into a suitable oven-safe baking dish.

  8. Preheat the oven to 180°C. Once heated, place the baking dish in the oven and bake for 5 to 7 minutes until the omelette sets.

  9. Remove the dish from the oven, sprinkle the grated mozzarella cheese over the top, and return it to the oven until the cheese melts and the top becomes golden.

  10. Once baked, remove the dish from the oven and garnish with chopped green onions.
