  • 1 medium-sized onion, finely chopped.
  • 1/2 teaspoon of sumac.
  • 1 teaspoon of lemon juice.
  • 1/2 teaspoon of black pepper.
  • Salt (to taste).
  • 1 tablespoon of olive oil.

Steps to Prepare Palestinian Spinach Pies:

Preparing the Dough:

  1. In a large bowl, combine the flour, sugar, salt, vegetable oil, and water.

  2. Knead the ingredients together until you get a smooth and cohesive dough.

  3. Cover the bowl and let the dough rest for 30 minutes.

  4. After resting, divide the dough into medium-sized equal balls.

Preparing the Filling:

  1. In another bowl, mix the spinach, olive oil, chopped onion, black pepper, salt, sumac, and lemon juice.
  2. Stir the mixture well to combine all the ingredients.
  3. Place the mixture in a colander for about 10 minutes to drain excess liquid.
