Pancho Cake – Recipe for Pancho Cake – How to Make Pancho Cake

Filling Ingredients:

  • 1 ½ cups of sour cream
  • 300 grams of sweetened condensed milk
  • 1 tablespoon of vanilla extract
  • 2 cups of pitted cherries
  • ½ cup of crushed walnuts

Cake Ingredients:

  • 1 cup of white sugar
  • 2 eggs
  • 1 cup of sour cream
  • 1 ½ cups of white flour
  • 150 grams of sweetened condensed milk
  • 3 tablespoons of cocoa powder
  • 1 tablespoon of vanilla extract
  • 1 teaspoon of baking soda
  • 1 tablespoon of white vinegar
  • Butter (as needed for greasing the pan)
  • Flour (as needed for dusting the pan)

Topping Ingredients:

  • 1 cup of chocolate sauce
  • ½ cup of crushed walnuts

How to Prepare Pancho Cake:

Preparing the Filling:

  1. In a suitable bowl, combine the sour cream, vanilla extract, and sweetened condensed milk. Mix well until the ingredients are fully blended.
  2. Place the mixture in the fridge until ready to use.

Preparing the Cake:

  1. In an electric mixer bowl, beat the eggs with white sugar until the mixture becomes firm.
  2. In a small bowl, mix the vinegar with baking soda.
  3. Add the sour cream, vanilla extract, sweetened condensed milk, and the baking soda mixture to the beaten eggs and sugar, and continue mixing on low speed.
  4. Gradually add the white flour to the mixture while continuing to mix until well combined.
  5. Grease two baking pans with butter and dust them with flour. Pour half of the cake batter into one of the pans.
  6. Add the cocoa powder to the remaining batter and mix well until fully incorporated.
  7. Pour the chocolate cake batter into the second baking pan.
  8. Preheat the oven to 180°C (350°F), and once it reaches the desired temperature, place both pans in the oven for 35 minutes.
  9. Remove the cakes from the oven and let them cool.

Assembling the Cake:

  1. Place the chocolate cake on a serving dish, spread the filling over the top, and sprinkle with crushed walnuts and cherries.
  2. Place the plain cake on top of the filling, and spread the remaining filling over the top of the cake.
  3. Garnish with more crushed walnuts and chocolate sauce.
  4. Refrigerate the cake for 8 hours.
