For the pasta:

  • 1 pack of penne pasta
  • ½ cup grated Edam cheese

For the pumpkin sauce:

  • 2 tablespoons of olive oil
  • 1 tablespoon of fresh rosemary
  • 200 grams of boiled and mashed pumpkin
  • 1 clove of minced garlic
  • ½ cup of cream
  • ⅓ cup of grated Edam cheese
  • 1 tablespoon of white vinegar
  • ½ teaspoon of red chili flakes
  • Salt (to taste)

For the meat:

  • 250 grams of ground beef
  • 3 cloves of finely minced garlic
  • 2 tablespoons of olive oil
  • Salt (to taste)
  • Black pepper (to taste)

How to Prepare Pasta and Pumpkin Meatloaf:

  1. Cook the Pasta:

    • Boil the penne pasta in salted water according to the instructions on the package.
    • Drain the pasta and reserve some of the cooking water.
  2. Prepare the Pumpkin Sauce:

    • In a pan, heat the olive oil over medium heat, add the fresh rosemary, and sauté for about 2 minutes, then remove it from the heat.
    • Add the mashed pumpkin, cream, garlic, grated cheese, vinegar, and 1 cup of the reserved pasta water to the pan.
    • Stir the ingredients until well combined, then add the chili flakes and salt to taste.
    • Bring the mixture to a simmer and let it cook until it thickens.
  3. Cook the Meat:

    • In another pan, heat the olive oil over medium heat, add the minced garlic, and sauté until golden.
    • Add the ground beef and cook, stirring occasionally, until fully browned.
    • Season with salt and black pepper to taste, then remove from heat.
  4. Assemble the Meatloaf:

    • In a baking dish, spread a thin layer of the pumpkin sauce on the bottom.
    • Add half of the cooked pasta on top of the sauce, then spread the cooked ground beef over the pasta.
    • Pour half of the remaining pumpkin sauce over the beef, followed by the rest of the pasta.
    • Top the dish with the remaining pumpkin sauce and sprinkle grated Edam cheese on top.
  5. Bake:

    • Preheat the oven to 180°C (350°F).
    • Place the baking dish in the oven and bake for about 25 minutes, or until the cheese on top is melted and golden.
