  • 1 large eggplant, cut into rounds.
  • Black pepper to taste.
  • Salt to taste.
  • 1 pack of spiral pasta.
  • 2 cups of tomato sauce.
  • ¼ cup of Parmesan cheese.
  • ½ cup of mozzarella cheese.
  • 1 tablespoon of olive oil.
  • 1 tablespoon of vegetable oil.

How to Prepare Pasta with Eggplant:

  1. Season the Eggplant:
    Sprinkle both sides of the eggplant slices with black pepper and salt, then set them aside for a few minutes.

  2. Fry the Eggplant:
    Heat the vegetable oil in a pan over medium heat and fry the eggplant slices, flipping them to cook evenly on both sides.

  3. Cook the Pasta:
    In a separate pot, cook the spiral pasta in salted boiling water according to the package instructions. Once done, drain the pasta well.

  4. Assemble the Dish:
    Grease a suitable-sized Pyrex dish with olive oil. Arrange half of the fried eggplant slices at the bottom.

  5. Layer the Pasta and Sauce:
    Spread the cooked spiral pasta over the eggplant, then pour the tomato sauce over the pasta. Arrange the remaining eggplant slices on top.

  6. Add Cheese:
    Sprinkle Parmesan cheese over the top, followed by mozzarella cheese, ensuring it covers the entire surface of the dish.

  7. Bake the Dish:
    Preheat the oven to 180°C (350°F). Once heated, place the Pyrex dish in the oven and bake until the Parmesan and mozzarella cheese melt completely.

  8. Serve:
    Remove the dish from the oven and transfer the contents to a serving plate.
