For the Dough:
- 4 cups of white flour
- 2 cups of boiled potatoes (mashed while hot)
- 2 tablespoons of butter
- 4 tablespoons of white sugar
- 1 tablespoon of yeast
- ½ cup of milk
- 2 egg yolks
- ½ teaspoon of white vinegar
- 1 tablespoon of milk
- 1 tablespoon of vegetable oil
For the Filling:
- 2 tablespoons of apricot jam
- ¼ cup of raisins
- ¼ cup of crushed almonds
- ½ cup of shredded coconut
For Brushing the Top:
- 1 egg yolk, beaten
Preparation Method for Potato Brioche:
Preparing the Dough:
In a deep bowl, mix the white flour, mashed potatoes, white sugar, butter, milk, and yeast. Stir well until the ingredients are fully combined.
In another small bowl, mix the egg yolks with the tablespoon of milk and white vinegar, stirring until well combined.
Add the egg mixture to the flour mixture and continue mixing until you form a smooth, soft dough.
Grease a bowl with vegetable oil, place the dough inside, cover with a cloth, and leave it to rest for about an hour.Preparing the Filling:
In a suitable bowl, combine all the filling ingredients (apricot jam, raisins, almonds, and coconut). Mix well until all ingredients are evenly combined.Shaping the Brioche:
