  • 5 medium-sized potatoes, peeled.
  • 1 ½ cups of vegetable oil.
  • Chopped green onions (as desired).
  • 1 teaspoon of table salt.
  • 1 teaspoon of black pepper.
  • 1 bunch of parsley, finely chopped.
  • ½ cup of fresh lemon juice.
  • 1 teaspoon of red chili powder.
  • 1 teaspoon of ground cinnamon.
  • 2 green chili peppers.
  • 2 cups of fine bulgur.

Preparation of Potato Kofta:

  1. Boil the peeled potatoes in a pot of salted boiling water until fully cooked. Then, mash them while still hot using a blender or potato masher.

  2. Place the bulgur in a suitable bowl and pour 1 cup of hot water over it. Cover the bowl and let the bulgur absorb the water.

  3. Add the mashed potatoes to the soaked bulgur, along with the red chili powder, black pepper, salt, lemon juice, cinnamon, and vegetable oil. Using your hands, mix all the ingredients thoroughly until well combined.

  4. Add the chopped parsley and green onions to the mixture and mix again until the ingredients form a uniform dough.

  5. Shape the dough into small balls, and if desired, press them to flatten slightly.

  6. In a deep pot, heat a generous amount of vegetable oil over medium heat. Fry the potato kofta balls until they turn golden brown on all sides.
