Potato Salad – Recipe for Potato Salad – How to Prepare Potato Salad

Potato salad is a light dish enjoyed by many due to its variety of vegetables and its rich content of vitamins. It’s also delicious and easy to prepare, requiring only 15 minutes to make and serving 6 people.

Main Ingredients for Preparing Potato Salad:

Potato Salad
  • 3 large potatoes
  • 1 teaspoon of fine salt
  • 2 strips of lemon peel
  • 1 medium can of red kidney beans
  • 1 medium can of yellow corn

Vegetable Ingredients:

  • 2 bunches of arugula leaves
  • 1 bunch of purslane leaves
  • 2 stalks of green onions, finely chopped

Dill Dressing Ingredients:

  • ¼ cup of finely chopped dill
  • 2 cloves of garlic, minced
  • 1 cup of mayonnaise
  • ¼ cup of olive oil
  • ¼ cup of freshly squeezed lemon juice
  • 3 tablespoons of mustard
  • 1 tablespoon of grated lemon zest
  • 1 teaspoon of salt
  • 1 teaspoon of crushed chili flakes

How to Prepare Potato Salad:

Step 1 – Boiling the Potatoes:
In a medium-sized deep pot, place the potatoes and add enough water to cover them completely. Add the salt and lemon peel strips, then cook the potatoes over medium heat until fully tender. You can check their doneness by inserting a fork into the potatoes.

Step 2 – Preparing the Potatoes:
Once the potatoes are cooked, peel them while they’re still hot, one by one. Set them aside to cool completely, then cut them into small, equal-sized cubes. Place the cubes in a deep bowl and add the red kidney beans and yellow corn.

Step 3 – Preparing the Dill Dressing:
In a separate deep bowl, combine the chopped dill, minced garlic, mayonnaise, olive oil, freshly squeezed lemon juice, mustard, grated lemon zest, salt, and crushed chili flakes. Whisk all the ingredients together using a hand whisk until they form a smooth and well-blended dressing.

Step 4 – Combining the Salad:
Gently add the dill dressing to the potato mixture and carefully stir with a wide plastic spoon. Be sure to stir slowly to avoid mashing the potatoes and to allow the potatoes to absorb the dressing evenly.

Step 5 – Assembling the Salad:
In a large serving dish, arrange the arugula leaves, purslane leaves, and chopped green onions. Add the prepared potato salad on top and gently mix the greens and salad together. For decoration, you can add small tomato pieces on top before serving.
