Ingredients for Pumpkin Soup:
- 6 cups of chicken broth
- 1 tablespoon of salt
- 1 teaspoon of chopped parsley
- 1 cup of chopped onion
- 1/2 teaspoon of chopped thyme
- 1 clove of minced garlic
- 1/2 cup of whipped cream
- 1/2 teaspoon of black pepper
- 4 cups of mashed pumpkin
- Pistachios (optional, for garnish)
- 1 whole pumpkin, hollowed out to serve the soup in
How to Prepare Pumpkin Soup:
In a pot over medium heat, combine the mashed pumpkin, chopped onion, salt, thyme, chicken broth, minced garlic, black pepper, and chopped parsley. Stir well to combine all ingredients.
Once the mixture starts to boil, lower the heat and let it simmer for 30 minutes on low heat.
Remove the pot from the heat and allow the mixture to cool slightly.
In batches, blend the mixture in a blender until smooth and consistent in texture.
Return the blended mixture to the pot and heat it again on medium heat until it boils.
