- 40 pieces of crushed Digestive biscuits
- 200 grams of melted butter
- 4 tablespoons of date molasses

- 300 grams of Philadelphia cream cheese (at room temperature)
- 1 cup of powdered sugar
- 180 grams of cream (qishta)
- 1 tablespoon of powdered gelatin
- 4 tablespoons of cold water
- 4 tablespoons of hot water
- 1 cup of liquid cream
- 200 grams of rahash (halva)
- 4 tablespoons of powdered milk
Topping Ingredients:
- 250 grams of rahash (halva)
- 190 grams of whipping cream
Garnish:
- ¼ cup of crumbled halva
Preparation Method for Rahash Cheesecake:
Preparing the Cheesecake Base:
- In a suitable bowl, combine the crushed Digestive biscuits with date molasses and melted butter. Mix thoroughly until well combined.
- Press the mixture into the bottom of a cheesecake pan, ensuring it is evenly spread.
- Place the pan in the refrigerator for about 30 minutes to allow the base to set.
Preparing the Second Layer:
- In a small bowl, dissolve the powdered gelatin by mixing it with cold water. Stir slightly, then add the hot water and mix until the gelatin fully dissolves.
- In a large bowl, combine the cream cheese, whipping cream, powdered sugar, powdered milk, gelatin mixture, cream (qishta), and rahash. Use an electric mixer to blend all the ingredients until smooth and well-combined.
- Pour the mixture over the cheesecake base, smoothing the top with a spatula.
- Place the cheesecake back in the refrigerator and let it chill for 4 hours.
Preparing the Topping (Third Layer):
- In a saucepan, mix the whipping cream with rahash over low heat, stirring continuously until the mixture thickens.

- Return the cheesecake to the refrigerator to chill again.
