- 4 cups of all-purpose flour
- ¾ cup of butter
- 2¼ teaspoons of instant yeast
- ¼ cup of lukewarm water
- 1 large egg
- ¾ cup of milk
- 3 tablespoons of sugar
- 1 teaspoon of salt
Filling Ingredients:
- 2 cups of powdered sugar
- 2 tablespoons of milk
- 1 cup of raisins
- 3 tablespoons of melted butter
- 1 teaspoon of ground cardamom
- ¼ teaspoon of saffron
Topping Ingredients:
- 1 large beaten egg
- ¼ cup of powdered sugar
- ½ cup of sliced almonds
How to Prepare Raisin Pie:
Prepare the dough: In a stand mixer, add ¼ cup of flour and butter. Mix on medium speed for 3 minutes until the butter turns light yellow.
Spread a sheet of parchment paper on a dry surface and pour the butter-flour mixture onto it. Shape the mixture into a rectangle using your fingers, then cover it with another piece of parchment paper and place it in the fridge for 15 minutes to cool slightly.
In the same mixer, add the remaining flour, yeast, water, egg, milk, sugar, and salt. Mix on medium speed until a soft and smooth dough forms.
Sprinkle some flour on a dry surface and roll out the dough into a rectangle using your fingers, then even it out with a rolling pin. Take the butter-flour mixture out of the fridge and place it in the center of the dough. Fold the edges of the dough over the butter mixture, wrap it in parchment paper, and return it to the fridge for 30 minutes.
After 30 minutes, take the dough out of the fridge and roll it out again into a rectangle. Fold the rectangle’s edges over itself, wrap it in plastic wrap, and put it back in the fridge for another 60 minutes. Repeat this process two more times.
Prepare the filling: In a large bowl, combine the sugar, milk, butter, cardamom, and saffron. Mix them with your fingers until all the ingredients are well combined.
Take the dough out of the fridge and roll it out once more into a rectangle. Cut it lengthwise into two equal rectangles. Spread half of the filling over each rectangle, then roll them up into two logs. Twist each log into a spiral shape and place them in a baking tray. Cover them with plastic wrap and leave them in a warm place for 15 minutes to allow the dough to rise before baking.
Preheat the oven to 180°C and place the tray on the middle rack. Brush the surface of the spirals with the beaten egg using a wide brush and sprinkle the almond slices and powdered sugar over them.
Bake the raisin pies in the oven for about 15 minutes until they turn golden brown. Remove them from the oven and serve immediately.
Enjoy your delicious raisin pie, perfect for cozy winter gatherings!
