Ingredients for Ras Al-Asfour:
- 500 grams of minced meat
- 2 medium onions, finely chopped
- 4 cloves of crushed garlic
- 1 cup of chopped parsley
- 1 teaspoon of black pepper
- 1/2 teaspoon of cumin
- 1 teaspoon of dried coriander
- 1 teaspoon of salt
- 1 teaspoon of curry powder
- 2 cups of vegetable oil (for frying)
- 1 teaspoon of ginger
- 2 medium tomatoes, diced
- 1 tablespoon of tomato paste
- 1 cup of warm water
Steps to Prepare Ras Al-Asfour:
Mix the spices:
- In a small bowl, combine cumin, black pepper, salt, coriander, and curry powder. Mix well until the spices are evenly combined.
Prepare the meat mixture:
- In another large bowl, place the minced meat. Add half of the crushed garlic, half of the chopped onions, and half of the prepared spice mixture. Using your hands, mix everything thoroughly until well combined.
Shape the meatballs:
- Form small balls from the meat mixture, about the size of a cherry.
Fry the meatballs:
- Heat the vegetable oil in a medium-sized pot over medium heat. Once hot, fry the meatballs until they are half-cooked, then remove them from the oil and place them on paper towels to drain any excess oil.
