Dough Ingredients:

  • 1 egg.
  • 1 cup of powdered milk.
  • 1 tablespoon of vegetable oil or butter.
  • 1 teaspoon of baking powder.

Milk Preparation Ingredients:

  • 4 cups of liquid milk.
  • ½ cup of white sugar.
  • 1 tablespoon of orange blossom water.
  • 1 teaspoon of rose water.
  • 1 teaspoon of ground cardamom.

For Garnishing:

  • 1 teaspoon of saffron.
  • 4 tablespoons of crushed pistachios.

Preparation of Ras Malai:

Preparing the Dough:

  1. In a suitable bowl, mix together the egg, powdered milk, baking powder, and butter until the ingredients are well combined and form a smooth dough.

  2. Shape the dough into small balls, roughly the size of a nutmeg or slightly smaller.

Preparing the Milk:

  1. In a pot over medium heat, bring the liquid milk to a boil. Add the white sugar and ground cardamom, stirring until the sugar is fully dissolved.

  2. Gently add the dough balls into the milk mixture, allowing them to cook for about 15 minutes until they double in size.

  3. Remove the pot from the heat and add the orange blossom water and rose water. Let the mixture cool down to room temperature.

  4. Pour the milk and dough balls into small cups and place them in the refrigerator to chill completely.

  5. Once cooled, garnish the top with crushed pistachios and saffron.
