Rawani Basbousa is a delicious dessert, known for its rich taste and high nutritional value due to its various ingredients. It’s a traditional treat that's easy to prepare. This dessert takes around 20 minutes to prepare and 35 minutes to bake. The recipe serves four people.

For the Cake:

  • 3 medium eggs
  • ¾ cup of white sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of vegetable oil
  • 1 cup of yogurt
  • 1 cup of semolina
  • 1 cup of all-purpose flour
  • 1 cup of desiccated coconut
  • 2 teaspoons of baking powder
  • 1 tablespoon of butter (for greasing the pan)

For the Syrup:

  • 1 cup of water
  • 2 cups of white sugar
  • 1 tablespoon of rose water
  • 1 tablespoon of orange blossom water
  • 1 tablespoon of lemon juice

How to Prepare Rawani Basbousa:

Prepare the Syrup:

  1. Place the water and sugar in a saucepan over medium heat and bring to a boil.
  2. Once it starts boiling, lower the heat and let it simmer for 10 minutes until the syrup thickens.
  3. Remove the saucepan from the heat, then stir in the rose water, orange blossom water, and lemon juice. Set aside to cool completely.

Prepare the Cake:

  1. In a mixing bowl, whisk the eggs, sugar, and vanilla until well combined.
  2. Gradually add the vegetable oil, continuing to whisk until the mixture is smooth.
  3. Add the yogurt and mix until fully incorporated.
  4. Slowly fold in the semolina, flour, baking powder, and desiccated coconut, and mix until the batter is smooth.

Baking:

  1. Grease a baking tray with the butter, then pour the Rawani Basbousa mixture into the tray.
  2. Preheat the oven to 180°C (350°F), and bake the cake for about 35 minutes or until the top turns golden brown.
  3. Once out of the oven, cut the cake into squares or your preferred shapes.
  4. Pour the cooled syrup over the hot cake, allowing it to soak in.
