Ingredients for Rawani Basbousa:
For the Cake:
- 3 medium eggs
- ¾ cup of white sugar
- 1 teaspoon of vanilla extract
- 1 cup of vegetable oil
- 1 cup of yogurt
- 1 cup of semolina
- 1 cup of all-purpose flour
- 1 cup of desiccated coconut
- 2 teaspoons of baking powder
- 1 tablespoon of butter (for greasing the pan)
For the Syrup:
- 1 cup of water
- 2 cups of white sugar
- 1 tablespoon of rose water
- 1 tablespoon of orange blossom water
- 1 tablespoon of lemon juice
How to Prepare Rawani Basbousa:
Prepare the Syrup:
- Place the water and sugar in a saucepan over medium heat and bring to a boil.
- Once it starts boiling, lower the heat and let it simmer for 10 minutes until the syrup thickens.
- Remove the saucepan from the heat, then stir in the rose water, orange blossom water, and lemon juice. Set aside to cool completely.
Prepare the Cake:
- In a mixing bowl, whisk the eggs, sugar, and vanilla until well combined.
- Gradually add the vegetable oil, continuing to whisk until the mixture is smooth.
- Add the yogurt and mix until fully incorporated.
- Slowly fold in the semolina, flour, baking powder, and desiccated coconut, and mix until the batter is smooth.
Baking:
- Grease a baking tray with the butter, then pour the Rawani Basbousa mixture into the tray.
- Preheat the oven to 180°C (350°F), and bake the cake for about 35 minutes or until the top turns golden brown.
- Once out of the oven, cut the cake into squares or your preferred shapes.
- Pour the cooled syrup over the hot cake, allowing it to soak in.
