Ingredients for Rice and Chicken:
- 1 whole chicken, cut into eight pieces.
- 2 cinnamon sticks.
- 2 whole cardamom pods.
- 2 cloves.
- 1 teaspoon of saffron.
- 2.5 cups of rice (soaked in water for 30 minutes, then drained).
- Black pepper (to taste).
- Salt (to taste).
- 1/4 cup of oil.
- 1/4 cup of ghee.
For Garnishing:
- 2 medium onions, sliced.
- 5 cloves of minced garlic.
- 2 cups of chopped cilantro (coriander).

How to Prepare Rice and Chicken:
- Heat half of the oil in a pot over medium heat, add the chicken pieces, and sauté until browned on all sides.
- Add the cardamom, cinnamon, cloves, and salt to the chicken, then pour enough water to cover the pieces. Bring the mixture to a boil, then reduce the heat and let it simmer until the chicken is fully cooked.
- Remove the chicken pieces from the pot, reserving the broth.
- Grease an oven tray with a little ghee, place the chicken pieces in it, brush them with a bit more ghee, and broil them in the oven until they turn red and crispy on all sides.
- In a separate pot, heat the remaining oil, add the washed and drained rice, and stir for about two minutes.
- Add the saffron, black pepper, salt, and 5 cups of chicken broth. Bring the mixture to a boil, reduce the heat, and let the rice cook until all the liquid is absorbed and the rice is tender.
- Heat 2 tablespoons of oil in a pan, add the onion slices, and fry until golden brown, then set aside.
- Add the minced garlic to the same pan and sauté until fragrant, then add the cilantro and cook until it wilts.
Assembling the Dish:
- Place the cooked rice on a serving platter, arrange the chicken pieces on top, and garnish with the fried onion, garlic, and cilantro mixture.
