  • 1 kg of chicken.
  • 2 cups of rice, washed and soaked in water for 30 minutes.
  • 3 cups of full-fat milk.
  • 1 medium-sized onion, finely chopped.
  • Salt (to taste).
  • 2 bay leaves.
  • 6 cardamom pods.
  • 1 cinnamon stick.
  • 4 pieces of mastic gum.
  • 1 tablespoon of mixed spices.
  • 2 tablespoons of tomato paste.
  • 1 teaspoon of vinegar.
  • 2 tablespoons of ghee.
  • ¼ cup of vegetable oil.
  • 1 lemon.
  • Water (as needed).

Preparation of Saliq with Milk:

  1. Wash the chicken thoroughly, then soak it in boiling water mixed with vinegar for about 60 minutes.

  2. Clean the chicken and remove the skin. Cut the chicken into pieces.

  3. Soak the chicken in water mixed with lemon juice for 15 minutes, then drain it.

  4. In a pot, heat the vegetable oil over medium heat, add the chopped onions, and sauté until the onions soften.

  5. Add the cardamom pods, cinnamon stick, and mastic gum, stirring well to combine.

  6. Add the chicken pieces and stir occasionally until the chicken absorbs the flavors. Then, cover the chicken with water.

  7. Add salt and bay leaves, and bring the mixture to a boil. Let the chicken cook thoroughly, skimming off any white foam that appears.

  8. Remove the chicken from the pot and place it in a separate bowl. Rub the chicken with tomato paste, and sprinkle salt and mixed spices on top.

  9. Drain the soaked rice and place it in a pot over medium heat. Add 3 cups of chicken broth and stir.

  10. Let the rice absorb the broth and cook completely.

  11. Add the liquid milk to the rice and stir until the rice absorbs the milk and comes to a boil.

  12. In a small pot, melt the ghee, then pour it over the rice and milk mixture. Stir everything until well combined.

  13. Preheat the oven to 175°C (350°F). Place the chicken pieces in a baking tray and roast in the oven for about 20 minutes until the chicken is golden and fully cooked.

  14. Serve the rice and milk mixture on a large serving dish, and arrange the roasted chicken on top.
