Sals is a delicious dish known for its rich nutritional ingredients. It's also easy to prepare, requiring 45 minutes for preparation and another 60 minutes for cooking. In this recipe, I will share the ingredients for four servings and guide you through the preparation steps, hoping you enjoy this flavorful dish.

Ingredients for Sals:

  • 1 cup of bulgur
  • 1 cup of white flour
  • 1 cup of lentils
  • 1 cup of black-eyed peas (lobia)
  • 1 cup of boiled chickpeas
  • 1 bunch of Swiss chard, chopped
  • 5 cloves of garlic, finely minced
  • 1 bunch of fresh coriander, finely chopped
  • 3 tablespoons of olive oil
  • 1 medium-sized potato, diced
  • 1 cup of pasta
  • ½ cup of sumac soaked in hot water
  • 3 cups of boiling water
  • Salt (to taste)
  • Ground meat (as needed)

Preparation Steps for Sals:

  1. Cook the Legumes:

    • In a pot over medium heat, boil the black-eyed peas (lobia) and lentils.
    • Once they start to soften, add the diced potatoes, boiled chickpeas, pasta, and chopped Swiss chard. Stir the ingredients and let them cook until fully tender.
  2. Prepare the Kibbeh:

    • In a bowl, mix the white flour, bulgur, hot water, and salt. Knead the mixture until it forms a firm dough.
    • Divide the dough into small equal-sized balls, then stuff each one with the ground meat. Seal each kibbeh well and place them in a pot over medium heat.
    • Pour the soaked sumac water into the pot with the kibbeh and cook until the kibbeh is done.
  3. Prepare the Garlic and Coriander Mixture:

    • Heat the olive oil in a pan over medium heat. Add the minced garlic and stir until fragrant.
    • Add the chopped coriander and stir occasionally until it wilts, then remove the pan from the heat.
  4. Assemble the Dish:

    • Place the cooked vegetable mixture on a serving plate, then arrange the boiled kibbeh on top.
    • Pour the garlic and coriander mixture over the kibbeh and vegetables, gently stirring to combine all the flavors.
