Saudi Chicken Mutabbaq – How to Prepare Chicken Mutabbaq the Saudi Way

Saudi chicken mutabbaq is one of the most delicious dishes in Saudi cuisine, known for its rich nutritional value. It’s also relatively easy to prepare, requiring no more than 70 minutes to make and bake. For the Filling:

  • 2 medium-sized onions, sliced.
  • 400 grams of chicken breast, cut into thin strips.
  • 2 tablespoons of vegetable oil.
  • Salt (to taste).
  • 1 teaspoon of white pepper.
  • ½ teaspoon of black pepper.

For the Mutabbaq:

  • 500 grams of ready-made sambosa sheets or mutabbaq dough.
  • 2 eggs, beaten.
  • 1 tablespoon of vegetable oil (for greasing the baking tray).

Preparation of Saudi Chicken Mutabbaq:

Preparing the Filling:

  1. Heat the vegetable oil in a suitable pan over medium heat.
  2. Add the chicken breast strips, along with the black pepper, white pepper, and salt. Stir the ingredients occasionally until the chicken starts to cook.
  3. Add the sliced onions and continue stirring until the chicken is fully cooked and the onions are soft.
  4. Remove the pan from the heat and set the filling mixture aside to cool.

Preparing the Mutabbaq:

  1. Preheat the oven to 180°C (350°F), with both the top and bottom heating elements turned on.
  2. Grease the baking tray with the vegetable oil.
  3. Cut the mutabbaq dough or sambosa sheets into equal halves.
  4. Stack 5 sheets of dough horizontally on top of each other, then place 5 sheets vertically.
  5. Place 2 tablespoons of the filling in the center of the dough sheets.
  6. Fold the horizontal dough over the filling, then fold the vertical sheets to form a square shape.
  7. Repeat the process until all the ingredients are used.
  8. Arrange the mutabbaq squares in the greased baking tray, then brush the tops with the beaten eggs.
  9. Place the tray in the oven and bake until the mutabbaq squares turn golden brown.
