Saudi Sayadiyah – Saudi Sayadiyah Recipe – How to Prepare Saudi Sayadiyah

Saudi Sayadiyah is one of the most delicious fish dishes in Saudi cuisine. It's known for its high nutritional value and ease of preparation. Ingredients for Saudi Sayadiyah:

  • 3 pieces of grouper fish fillet.
  • 2 cups of rice, washed thoroughly.
  • 2 medium-sized onions, sliced into rings.
  • 2 cinnamon sticks.
  • 4 cardamom pods.
  • 3 cloves of garlic.
  • 3 bay leaves.
  • ½ teaspoon of turmeric.
  • Salt to taste.
  • ½ teaspoon of ground cinnamon.
  • Mixed spices to taste.
  • 1 teaspoon of ground coriander.
  • 2 tablespoons of white flour.
  • 2 tablespoons of butter.
  • Water (as needed).
  • ¼ cup of oil.

Method of Preparation:

Step 1: Preparing the Broth

Place water along with half the amount of onions, bay leaves, cardamom pods, and cinnamon sticks in a pot over medium heat. Stir the ingredients well until they blend together. Once done, strain the broth and set it aside.

Step 2: Seasoning the Fish

In a bowl, mix ground coriander, cumin, mixed spices, and turmeric until well combined. Coat the grouper fish fillets in this spice mixture.

Step 3: Frying the Fish

Fry the seasoned fish fillets lightly in hot oil until they are half-cooked, then remove from the heat and set aside.

Step 4: Cooking the Fish

In a pot, heat some vegetable oil and sauté the garlic until softened. Add the fish fillets along with half of the prepared broth. Let the ingredients cook until the fish is fully done.

Step 5: Cooking the Rice

After removing the fish from the pot, add the washed rice to the same pot with the remaining broth. Let the rice cook until it is nearly done. Shortly before the rice is fully cooked, place the fish back into the pot and cover.

Step 6: Preparing the Sauce

In a separate pot, melt the butter and mix it with the flour over medium heat. Add cinnamon, cumin, salt, mixed spices, and the remaining broth. Stir until you get a thick and consistent sauce.

Step 7: Frying the Onions

In another pan, heat some oil and fry the remaining onion rings until golden.

Final Step: Serving

To serve, place the rice and fish fillets on a serving plate. Garnish the dish with the fried onion rings and serve the sauce on the side. Enjoy this delicious Saudi Sayadiyah with your family or guests!
