Saudi Stuffed Chicken – How to Prepare Saudi Stuffed Chicken

Saudi stuffed chicken is a traditional dish in Saudi cuisine, often served as a main course, especially during Ramadan. This dish is known for its delicious taste and the high nutritional value of its ingredients. It is also relatively easy to prepare, requiring 40 minutes of preparation and another 40 minutes for cooking. Below are the ingredients for six people along with the steps to prepare this special dish from Saudi cuisine.

For the Rice:

  • 2 cups of Egyptian rice.
  • 1 teaspoon of salt.
  • 2.5 cups of water.
  • 2 tablespoons of vegetable oil.

For the Chicken:

  • 1 whole chicken.
  • 250 grams of ground meat.
  • 1 medium onion, finely chopped.
  • 60 grams of toasted pine nuts.
  • 50 grams of toasted almonds.
  • 25 grams of raisins.
  • 1 teaspoon of saffron.
  • 1 teaspoon of cumin.
  • 1/2 teaspoon of ground cinnamon.
  • 1/2 teaspoon of ground cardamom.
  • 1/2 teaspoon of ground nutmeg.
  • 1/2 teaspoon of ground cloves.
  • Salt (to taste).
  • Black pepper (to taste).
  • Water (as needed).
  • Butter (as needed, for brushing the chicken).
  • 1 bundle of mixed herbs (for seasoning).

Steps to Prepare Saudi Stuffed Chicken:

Preparing the Rice:

  1. In a pot, combine the Egyptian rice, water, salt, and vegetable oil.
  2. Bring to a boil over medium heat, then reduce the heat and cover the pot, allowing the rice to cook for about 10 minutes until it’s partially cooked (not fully done).

Preparing the Stuffing:

  1. In a large mixing bowl, combine the ground meat, partially cooked rice, cinnamon, chopped onion, cumin, saffron, cardamom, and nutmeg.
  2. Mix the ingredients thoroughly until well combined.
  3. Add the toasted pine nuts, toasted almonds, raisins, black pepper, and salt, and mix again.

Stuffing the Chicken:

  1. Stuff the chicken with the prepared filling, then sew the chicken’s cavity closed and tie its legs together.
  2. Place the stuffed chicken in a pressure cooker, and cover it with water. Add the bundle of herbs to the pot.
  3. Heat the pressure cooker over medium heat, and once it starts to steam, reduce the heat and allow the chicken to cook until fully done.

Roasting the Chicken:

  1. Once the chicken is cooked through, remove it from the pressure cooker and place it in a baking tray.
  2. Brush the chicken with butter.
  3. Preheat the oven to 180°C (350°F), and place the tray in the oven. Roast the chicken until its skin turns golden brown.
