- 1 kilogram of lamb, cut into large pieces
- 8 cups of drinking water
- 2 beef bouillon cubes
- 500 grams of basmati rice, rinsed and drained
- 2 tablespoons of ghee
- 3 medium-sized onions, finely chopped
- 1 cup of yogurt
- 2 medium-sized tomatoes, finely chopped
- 1 teaspoon of white pepper
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1 teaspoon of ground cardamom
- 1 teaspoon of turmeric
- 3 cloves of crushed garlic
How to Prepare Saudi-Style Rice with Meat:
Boil the meat: Place the lamb pieces in a suitable pot, cover with water, and bring to a boil. Skim off any foam that forms on the surface. Add the bouillon cubes, cover the pot, and let it simmer over low heat until the meat is tender.
Prepare the rice: Remove the lamb from the pot, ensuring the remaining broth measures around 6 cups. Add the basmati rice to the broth, bring it to a boil for about 10 minutes, and then strain the rice, setting it aside.
Sauté the onions and meat: In another pot, melt the ghee over medium heat. Add the chopped onions, stirring occasionally until softened. Add the boiled lamb pieces and gently stir to combine with the onions.
Mix the spices and yogurt: In a separate bowl, combine the tomatoes, yogurt, crushed garlic, cumin, coriander, white pepper, turmeric, and ground cardamom. Mix well until all ingredients are blended.
Combine ingredients and cook: Pour the yogurt mixture over the lamb, then add the rice on top of the meat mixture. Let it cook over low heat for about 30 minutes until the rice is fully cooked.
