Saudi Sushi – Recipe and Preparation Method

Ingredients for Saudi Sushi:
Rice Ingredients:
- 1 cup of washed, soaked, and drained rice
- 1 tablespoon of butter
- 4 tablespoons of olive oil
- 2 large red onions, finely chopped
- 3 cloves of crushed garlic
- 2 cinnamon sticks
- 3 cloves
- ½ cup of shrimp shells
- Black pepper (to taste)
- Salt (to taste)
Fish and Shrimp Ingredients:
- 6 large shrimp
- 400 grams of fish fillet (cut into strips)
Marinade Ingredients:
- Olive oil (to taste)
- Lemon juice (to taste)
- Black pepper (to taste)
- Salt (to taste)
Coating Ingredients:
- Black pepper (to taste)
- Salt (to taste)
- Garlic powder (to taste)
- 2 eggs
- Flour (as needed)
Tahini Sauce Ingredients:
- ½ cup of tahini
- ¼ cup of yogurt
- 1 lemon (juiced)
- Black pepper (to taste)
- Salt (to taste)
Red Sauce Ingredients:
- 100 grams of tamarind
- 1 small red onion, finely chopped
- 1 clove of crushed garlic
- 1 teaspoon of ground coriander
- Black pepper (to taste)
- Salt (to taste)
- 1 tablespoon of white sugar
Preparation Method for Saudi Sushi:
Prepare the Rice:
- Heat olive oil in a pot over medium heat. Add the chopped onion and sauté until softened.
- Add the cinnamon, cloves, shrimp shells, and garlic. Cover with water and allow the mixture to simmer to create a flavorful broth.
- Add the pre-soaked rice and cook until the rice is tender.
Prepare the Tamarind Sauce:
- Soak the tamarind in boiling water until it breaks apart. Strain the liquid.
- In a separate pan, heat a little oil and sauté the onion until soft. Add the tamarind liquid, black pepper, salt, ground coriander, and sugar. Cook until the sauce thickens slightly.
Marinate the Fish and Shrimp:
- Season the fish fillets and shrimp with olive oil, lemon juice, black pepper, and salt. Set aside.
Fry the Fish and Shrimp:
- Coat the fish and shrimp in flour, then dip them in beaten eggs, followed by breadcrumbs.
- Fry them in hot oil until golden brown and fully cooked. Set aside.
Prepare the Sushi Rolls:
- Cut bread into squares and lay them on a sushi mat lined with plastic wrap.
- Spread a layer of rice on the bread square. Add a small amount of red sauce, a shrimp, and a strip of fish in the center.
- Roll the sushi tightly, repeating until all ingredients are used. Fry the sushi rolls in a little oil until golden on all sides.
Slice and Serve:
- Slice the sushi rolls into small round pieces. Drizzle with tahini sauce or garnish with red sauce on top.
