Ingredients for Iraqi Sheikh Mahshi:

- 1 kg of eggplant
- 500 grams of minced meat
- 2 medium-sized onions, finely chopped
- ½ cup of chopped celery
- ½ cup of soaked crushed chickpeas
- 1 teaspoon of turmeric
- 1 tablespoon of mixed spices
- ½ teaspoon of black pepper
- 3 cloves of crushed garlic
- 2 teaspoons of table salt
- 3 tablespoons of tomato paste
- Juice of 1 medium-sized lemon
- 1½ cups of tomato juice
- Drinking water (as needed)
How to Prepare Iraqi Sheikh Mahshi:
Heat a generous amount of vegetable oil in a pot over medium heat, then fry the eggplants for about three minutes before removing them from the heat.
In a separate bowl, mix the minced meat, chopped onions, chopped celery, mixed spices, turmeric, soaked chickpeas, crushed garlic, black pepper, ½ cup of water, and 1 teaspoon of salt. Stir until all ingredients are well combined.
Add half of the tomato paste, half of the tomato juice, and half of the lemon juice to the mixture, then mix again until everything is fully incorporated.
Make a lengthwise cut in the fried eggplants and stuff them with the prepared filling.
In another pot, add a little vegetable oil and place the stuffed eggplants inside.
In a separate bowl, mix the remaining tomato paste, lemon juice, tomato juice, and salt, then pour the mixture over the eggplants in the pot. Add enough water to submerge the eggplants.
Place the pot on medium heat and let it boil until the ingredients are cooked through, which should take about 40 minutes.
Remove the pot from the heat, and transfer the eggplants and sauce to a serving dish.
