Shish Barak is a delicious traditional dish from Syrian cuisine. It requires some skill to prepare and involves following the steps carefully. This dish is rich in nutrients, especially due to its yogurt and garlic content.

Dough Ingredients:
- 1 ½ cups of all-purpose flour
- ¼ teaspoon of fine salt
- ¾ cup of full-fat milk
- ½ cup of lukewarm water
Filling Ingredients:
- 500 grams of minced meat
- 4 tablespoons of butter
- 1 medium-sized onion, finely chopped
- 1 teaspoon of salt
- ½ teaspoon of mixed spices
- ½ cup of finely chopped parsley
Yogurt Sauce Ingredients:
- 1 liter of sour yogurt
- 2 tablespoons of cornstarch
- 1 large egg
- 1 teaspoon of fine salt
Garnishing Ingredients:
- 4 tablespoons of butter
- 5 garlic cloves, finely minced
- ½ cup of finely chopped fresh coriander
How to Prepare Shish Barak:
Step 1 – Preparing the Dough:
In a bowl, sift the flour, then gradually add the milk while kneading the mixture with your fingers. Slowly add the lukewarm water until you achieve a soft dough. Knead the dough for about 5 minutes. Once well kneaded, cover it with plastic wrap and let it rest for 60 minutes.
Step 2 – Preparing the Filling:
In a pot, melt the butter over medium heat, then add the chopped onion and minced meat. Stir continuously until the meat is fully cooked. Add the salt and mixed spices, then let the mixture simmer on low heat for an additional 3 minutes. Lastly, add the finely chopped parsley and stir well.
Step 3 – Shaping the Dough:
Roll out the dough and cut it into small circles. Place a small amount of the meat filling in the center of each dough circle. Fold the dough over the filling and pinch the edges to create a small hat-shaped dumpling. Arrange the dumplings on a baking tray sprinkled with a little flour.
Step 4 – Baking the Dumplings:
Preheat the oven to 400°F (200°C). Bake the dumplings for 10–15 minutes until they turn golden.
Step 5 – Preparing the Yogurt Sauce:
In a small bowl, dissolve the cornstarch in ½ cup of lukewarm water. Add this mixture to the sour yogurt and egg, and strain the mixture through a fine sieve to ensure it’s well blended. Cook the yogurt mixture over medium heat, stirring continuously until it starts to boil.
Step 6 – Cooking the Shish Barak:
Once the yogurt sauce is ready, drop the baked dumplings into the yogurt and let them cook over low heat for 10 minutes.
Step 7 – Preparing the Garlic and Coriander Garnish:
In a small pan, melt the butter and sauté the garlic until golden. Add the coriander and sauté until it wilts. Be careful not to burn the mixture.
Step 8 – Final Touches:
Pour the shish barak into a serving dish and top it with the sautéed garlic and coriander mixture.
