Shrimp Soup with Cream

  • 900 grams of small shrimp, cleaned, peeled, and half-cooked
  • 4 leeks, sliced
  • 1/4 cup of olive oil
  • 3 garlic cloves, minced
  • 1/4 teaspoon of red chili flakes
  • 8 cups of fish broth
  • 1/2 cup of butter
  • 1/2 cup of all-purpose flour
  • 4 cups of cooking cream
  • 1 cup of tomato paste
  • 1 tablespoon of salt
  • 1 teaspoon of black pepper

For Garnishing:

  • 4 medium lemons, cut into slices
  • 100 grams of small shrimp, cleaned, peeled, and boiled

Steps to Prepare Shrimp Soup with Cream:

  1. Sauté the leeks and garlic:

    • In a large pot over medium heat, add the olive oil and let it warm up. Add the sliced leeks and sauté, stirring occasionally, for about five minutes until softened.
    • Add the minced garlic and cook for an additional minute, stirring frequently.
  2. Cook the shrimp:

    • Add the peeled shrimp and red chili flakes to the pot, stirring occasionally until the shrimp are fully cooked. Once done, remove the mixture from the heat and let it cool slightly.
  3. Blend the mixture:

    • Using a food processor or blender, puree the shrimp and leek mixture until smooth.
  4. Prepare the roux:

    • In the same pot, melt the butter over medium heat. Add the flour and whisk continuously for about a minute to create a roux.
  5. Add the cream:

    • Gradually pour in the cooking cream, whisking until the mixture thickens into a smooth consistency.
  6. Combine the soup:

    • Add the pureed shrimp mixture into the pot, stirring to combine. Pour in the fish broth, tomato paste, salt, and black pepper. Stir well and let the soup simmer on low heat for about 10 minutes to allow the flavors to meld together.
  7. Serve:

    • Ladle the shrimp soup into deep serving bowls, and garnish with the boiled shrimp on top. Serve hot with lemon slices on the side for added flavor.

Enjoy this rich and creamy shrimp soup with your family or guests, and savor its delicious taste alongside the refreshing tang of lemon.
