Ingredients for Soft Shish Tawook Pies:
For the Dough:
- 1 kg of white flour
- ½ cup of butter
- 3 eggs
- 1 tablespoon of table salt
- ½ teaspoon of powdered vanilla
- 1 teaspoon of baking powder
- 4 tablespoons of sugar
- 3 tablespoons of powdered milk
- 1 tablespoon of yeast
- 1 cup of warm water (for the yeast)
- 1 small cup of vegetable oil
- 1¾ cups of warm drinking water (for kneading)
For the Shish Tawook Filling:
- Minced chicken breast (as needed)
- 1 tablespoon of vinegar
- 1 tablespoon of vegetable oil
- Salt to taste
- Black pepper to taste
- 1 teaspoon of Shish Tawook spices
- 1 teaspoon of ground cardamom
- 1 teaspoon of sweet red pepper
- 2 tablespoons of pepper paste
- 2 tablespoons of yogurt
- 1 teaspoon of tomato paste
Preparation Method for Soft Shish Tawook Pies:
Preparing the Dough:
- Mix the yeast with 1 tablespoon of sugar in a cup of warm water. Stir the ingredients until the yeast dissolves, then cover the mixture.
- In a separate bowl, mix the remaining sugar with the eggs, oil, and butter using a hand mixer until the ingredients are well combined.
- In another bowl, mix the flour, baking powder, vanilla, salt, and powdered milk. Once mixed, gradually add this flour mixture to the egg mixture.
- Using your hands, knead the dough while gradually adding the yeast mixture.
- Continue kneading while adding the warm water bit by bit until you get a soft, elastic dough. Let the dough rest for three hours to rise properly.
Preparing the Shish Tawook:
- In a bowl, mix the minced chicken breast with vinegar, spices, vegetable oil, yogurt, pepper paste, and tomato paste. Stir until the ingredients are fully combined. Let the mixture rest for 60 minutes.
- Roll out the dough on a floured surface to a thickness of about 1 cm, cutting it into circles.
