For the Kibbeh Dough:
- 250 grams of lean meat
- 2 cups of groats (jareesh)
- 1 cup of fine bulgur
- 1 medium onion, finely chopped
- 1 tablespoon of mixed spices
- Salt to taste
For the Filling:
- 1 kg of minced meat
- 250 grams of chopped onions
- ¼ cup of oil
- ½ bunch of finely chopped parsley
- 1 tablespoon of mixed spices
- ½ teaspoon of salt
- 4 tablespoons of sumac
- 1 teaspoon of black pepper
For the Sauce:
- 1.5 liters of water
- 1 tablespoon of curry powder
- 1 tablespoon of salt
- 2 tablespoons of vegetable oil
- 4 cups of tomato sauce
- 2 cups of coarsely chopped Swiss chard (silek)
How to Prepare Sour Kibbeh Soup:
Prepare the Kibbeh Dough:
- In a food processor, grind the meat, bulgur, groats, mixed spices, salt, and onion together until the mixture forms a smooth dough.
Prepare the Filling:
- Heat the oil in a pan over medium heat, then add the chopped onions and sauté until they soften.
- Add the minced meat and cook until the liquid evaporates and the meat is browned. Remove from heat.
- Add the chopped parsley, black pepper, salt, sumac, and mixed spices to the cooked meat and stir until the mixture is well combined. Let the filling cool.
Shape the Kibbeh:
- Take a small amount of the kibbeh dough and flatten it in the palm of your hand.
- Place a spoonful of the filling in the center and close the dough around it, shaping it into a kibbeh disc.
- Repeat the process until all the dough and filling are used.
Prepare the Sauce:
- In a large pot, bring the water to a boil over medium heat.
- Add the curry powder, tomato sauce, vegetable oil, Swiss chard, and salt. Stir well.
- Gradually add the kibbeh discs to the boiling sauce and cook them until they float to the surface (about 7 minutes).
Serve:
- Remove the pot from the heat and pour the soup into a serving dish.
