For the Dough:
- 1 cup of all-purpose flour.
- ½ teaspoon of ground cinnamon.
- ½ teaspoon of yogurt.
- ½ teaspoon of salt.
- 1 tablespoon of vegetable oil.
- 2 cups of boiling water.
For the Lamb Broth:
- 500 grams of lamb, cut into cubes.
- 5 green cardamom pods.
- 1 small onion.
- 1 teaspoon of whole cumin seeds.
- 1 cinnamon stick.
- 1 bay leaf.
- Salt to taste.
- ½ teaspoon of black pepper.
Method of Preparation:
Step 1: Preparing the Lamb Broth
Place the lamb cubes in a pot and cover with water. Set the pot over low heat, skimming off any foam that rises to the surface.
Add the bay leaf, cinnamon stick, cardamom pods, onion, cumin seeds, salt, and black pepper to the pot.
Allow the mixture to simmer on low heat until the lamb is fully cooked. Once done, remove the pot from the heat and set the broth aside.
Step 2: Preparing the Dough
In another pot, bring 1 ½ cups of boiling water to medium heat and add salt.
Gradually add the flour, vegetable oil, yogurt, and ground cinnamon while continuously stirring to ensure the ingredients are well combined.
As the dough absorbs the liquid, remove the pot from the heat and continue stirring until the dough becomes soft.
Let the dough rest for 10 minutes.
Gradually add the remaining boiling water, stirring constantly until you achieve a smooth dough consistency.
Place the pot back on medium heat, stirring continuously until the dough pulls away from the edges of the pot.
Step 3: Shaping the Dough
