Spinach and cheese rolls are a delicious type of pastry often served as a side dish during breakfast, complementing other meals on the table. These rolls are easy to prepare, taking just 15 minutes to get ready and serving eight people.

  • 4 cups of all-purpose flour
  • 1 tablespoon of instant yeast
  • 1 teaspoon of baking powder

  • ¼ cup of sunflower oil
  • 1 cup of warm water

For the Filling:

  • 2 cups of frozen spinach
  • 1 cup of feta cheese
  • 1 teaspoon of salt
  • ½ teaspoon of ground black pepper
  • 12 green onions, finely chopped
  • ¼ cup of finely chopped sun-dried tomatoes
  • ½ cup of olive oil

Preparation Method for Spinach and Cheese Rolls:

  1. Preparing the Dough: In a mixer, combine 3½ cups of flour with yeast, baking powder, salt, sugar, and powdered milk. Attach the dough hook and mix the ingredients on medium speed for about 5 seconds to blend.

  2. Adding Wet Ingredients: Add the oil and warm water to the dry ingredients, then mix on low speed. If the dough is too soft, gradually add more flour until the dough becomes firm and well-combined.

  3. Letting the Dough Rise: Once the dough is formed, remove it from the mixer and place it in a bowl greased with oil. Cover the bowl with plastic wrap and let it rest in a warm place for about 60 minutes, or until the dough doubles in size.

  4. Making the Filling: In a large bowl, combine the frozen spinach, feta cheese, salt, black pepper, chopped green onions, olive oil, and sun-dried tomatoes. Mix the ingredients well to evenly distribute the flavors.

  5. Rolling the Dough: Once the dough has risen, roll it out on a lightly floured surface. Spread the spinach and cheese filling evenly over the dough.

  6. Shaping the Rolls: Gently roll the dough into a tight log, making sure to seal the edges to prevent the filling from spilling out. Using a sharp knife or thin thread, cut the log into 12 evenly sized rolls.

  7. Letting the Rolls Rise: Place the rolls in a baking tray and let them rest in a warm place for another 30 minutes until they double in size again.

  8. Baking the Rolls: Preheat the oven to 200°C (400°F). Place the tray on the middle rack of the oven and bake the rolls for about 15 minutes, or until they turn golden brown.
