Preparing the Base:
First, prepare the cheesecake mold with a removable bottom and set it aside. In a deep bowl, pour the strawberry jelly packet and add the boiling hot water, stirring until the jelly is completely dissolved.
Take a few ladyfinger biscuits and place them in a plastic bag. Crush them finely using a rolling pin, then transfer the crushed biscuits to a deep bowl. Add the melted butter and mix well.
Press the biscuit mixture into the bottom of the cheesecake mold, spreading it evenly.
Line the remaining ladyfinger biscuits vertically around the edges of the mold, pressing them against the sides to create a raised biscuit border.Preparing the Filling:
In a deep bowl, dissolve the strawberry jelly in the boiling hot water, stirring slowly until completely dissolved.
In a blender, combine the cream cheese, liquid cream, powdered sugar, vanilla, and orange zest. Blend at medium speed until the mixture is smooth and well-combined. Add the dissolved jelly and blend for a few more minutes.
Pour the filling over the biscuit base in the mold, smoothing the top. Place the cheesecake in the refrigerator for several hours to set.Finishing the Cheesecake:
After several hours, remove the cheesecake from the fridge and transfer it to a serving plate. Use a wide brush to apply the dissolved jelly over the ladyfinger biscuits, allowing them to absorb the jelly fully.Preparing the Topping:
In a deep bowl, dissolve the strawberry jelly in the boiling hot water, stirring until fully dissolved.
Cut the strawberries into evenly sized medium cubes and add them to the jelly. Stir the mixture well to combine the strawberries and jelly.
Spread the strawberry and jelly mixture evenly over the top of the cheesecake. Place the cheesecake back in the refrigerator for several more hours to allow the topping to set.
