  • 1 teaspoon paprika
  • 500 grams ground lamb
  • 1 teaspoon salt
  • 3 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • 2 teaspoons dried mint
  • 1/4 cup pomegranate molasses

Steps to Prepare Stuffed Cabbage with Pomegranate Molasses:

Preparing the Cabbage:

  1. Boil the cabbage leaves:
    • Boil a large pot of water over medium heat, then add the cabbage leaves and boil for about five minutes until soft.
    • Remove the cabbage leaves and drain them thoroughly.

Preparing the Filling:

  1. Mix the filling ingredients:

    • In a bowl, combine the rice, cumin, mixed spices, cinnamon, paprika, salt, and ground lamb. Mix thoroughly until all ingredients are well combined.
  2. Roll the cabbage:

    • Take a cabbage leaf and lay it flat on a clean surface. Place a small spoonful of the filling in the center of the leaf.
    • Roll the leaf into a tight cylinder, making sure to tuck in the sides to seal the filling inside.
    • Repeat the process until all the filling and cabbage leaves are used. Set aside six extra cabbage leaves for layering the bottom of the pot.

Cooking the Stuffed Cabbage Rolls:

  1. Prepare the pot:

    • Line the bottom of a large cooking pot with the extra cabbage leaves you set aside.
    • Arrange the stuffed cabbage rolls tightly on top, then cover with enough water to submerge them.
    • Place a heavy plate or a weight on top of the rolls to keep them in place during cooking.
  2. Cook the rolls:

    • Bring the water to a boil over medium heat, then reduce the heat to low. Cover the pot and let it simmer.
  3. Prepare the sauce:

    • In a small bowl, mix the minced garlic, lemon juice, dried mint, and pomegranate molasses. Stir until well combined.
  4. Add the sauce:

    • After the cabbage rolls have cooked through, pour the pomegranate molasses mixture over them.
    • Let everything simmer for another five minutes to allow the flavors to meld.
