  • 500 grams of peeled shrimp
  • 900 grams of large green sweet peppers
  • 2 tablespoons of vegetable oil
  • 1 large onion, finely chopped
  • 1 tablespoon of tomato paste
  • 200 grams of tomatoes, peeled and chopped
  • 2 chicken broth cubes
  • 2 cups of hot water
  • 2 small hot peppers, chopped
  • 1 teaspoon of ground cumin
  • 1 cinnamon stick
  • 1 tablespoon of ground cardamom
  • 1 ½ cups of rice
  • Black pepper to taste
  • Salt to taste

Preparation Method for Stuffed Sweet Peppers with Shrimp Kabsa:

  1. Prepare the Peppers:

    • Cut off the tops of the green sweet peppers and empty out the insides.
  2. Cook the Filling:

    • Heat the vegetable oil in a pot over medium heat, then add the chopped onions and stir until they soften.
    • Lower the heat and add the tomato paste, stirring for about a minute.
    • Add the chicken broth cubes, chopped tomatoes, hot water, ground cumin, hot peppers, black pepper, ground cardamom, cinnamon stick, and shrimp. Stir the mixture for about 4 minutes or until the shrimp turns pink.
    • Add the rice and stir gently. Let the mixture simmer on low heat for 15 minutes, allowing the rice to partially cook.
  3. Stuff the Peppers:

    • Fill each hollowed pepper with the shrimp and rice mixture, leaving some space at the top (about three-quarters full).
    • Cover the tops of the peppers with aluminum foil.
  4. Bake the Peppers:

    • Preheat the oven to 175°C (347°F).
    • Place the stuffed peppers in the oven and bake for 30 minutes.
    • After 30 minutes, remove the foil and let the peppers bake for an additional 10 minutes.
