Ingredients for Tabbouleh with Quinoa:
- 400 grams of quinoa.
- Juice of 3 medium-sized lemons.
- 8 tablespoons of olive oil.
- 1 bunch of fresh mint, finely chopped.
- 2 bunches of fresh parsley, finely chopped.
- 1 green onion, finely chopped.
- 1 medium-sized tomato, finely chopped.
- 1 medium-sized cucumber, diced into small cubes.
- Pumpkin seeds (optional).
- Black pepper (to taste).

Preparation of Tabbouleh with Quinoa:
Wash the quinoa thoroughly, then place it in a pot over medium heat, adding double the amount of water.
