This recipe serves eight people and takes about 25 minutes to prepare.
Main Ingredients for Thyme Pie:
For the Dough:
- 2 ½ cups of white flour
- 1 tablespoon of instant yeast
- 1 teaspoon of salt
- 1 teaspoon of baking powder
- 2 tablespoons of sugar
- 3 tablespoons of sunflower oil
- 1 cup of warm milk
For the Filling:
- ¾ cup of thyme mixed with sesame seeds (green or red thyme, as preferred)
- ½ cup of olive oil
For the Glaze:
- 1 egg yolk
- ¼ teaspoon of vinegar
- 1 teaspoon of milk (or water if milk is unavailable)
Preparation Method for Thyme Pie:
Preparing the Dough:
In a stand mixer, add 2 cups of white flour, yeast, salt, baking powder, and sugar. Mix on medium speed to combine all ingredients.
Gradually add the sunflower oil and warm milk while continuing to knead for about 7 minutes until a soft and smooth dough forms. If the dough needs more flour, add a little at the end and knead well. Cover the dough with plastic wrap and leave it in a warm place to rise.Shaping the Dough:
Once the dough has risen, divide it into four equal parts. Shape each part into a ball and let them rest for a few minutes. Roll out each ball into a thin circle, making sure not to leave the dough too thick.Preparing the Filling:
In a deep bowl, combine the thyme, sesame seeds, and olive oil. Stir the mixture until well blended.Assembling the Pie:
Place the rolled-out dough circles on a baking tray. Spread the thyme mixture evenly over the dough.
Using a knife, cut the dough from the center to create equal triangular pieces, but be careful not to cut through the edges of the dough.
Starting from the tip of each triangle, roll the dough into a spiral shape. Repeat this process for all triangles. Optionally, trim the edges of the dough and use the cut pieces to decorate the center of the pie.Preparing the Glaze:
In a small bowl, mix the egg yolk with vinegar and milk. Brush the glaze over the surface of the pie.Baking the Pie:
Preheat the oven to 180°C (350°F). Place the pie on the middle rack of the oven and bake until the pie turns golden brown.
Your thyme pie is now ready! Serve it warm and enjoy with family or guests. Bon appétit!
