Tilda Rice with Kofta is a delicious dish with a magical aroma due to the presence of kofta. Kofta is a popular dish in almost every country around the world, but each country has its own unique way of preparing it.
This dish is easy to make and can be served for lunch or dinner. While it takes some time to prepare, the result is well worth the effort as it yields an amazing outcome.
Main Ingredients for Tilda Rice with Kofta:
For the rice:
- 2 ½ cups of Tilda Basmati rice
- 1 tablespoon of sunflower oil
- 2 tablespoons of melted butter
- 5 cardamom pods
- 5 whole black peppercorns
- 5 cloves
- 2 bay leaves
- 1 small cinnamon stick
- 2 teaspoons of salt
For the kofta:
- 500 grams of minced meat
- 1 teaspoon of salt
- ¼ teaspoon of ground black pepper
- ½ teaspoon of ground cardamom
- ½ teaspoon of ground coriander
- ½ teaspoon of cumin
- ½ teaspoon of turmeric
- ½ teaspoon of chili powder
- ½ teaspoon of paprika
For the sauce:
- 2 tablespoons of sunflower oil
- 3 cloves of minced garlic
- 1 tablespoon of finely grated ginger
- 1 medium green bell pepper, diced
- 1 medium yellow bell pepper, diced
- 1 medium red bell pepper, diced
- 1 medium orange bell pepper, diced
- 1 teaspoon of salt
- ¼ teaspoon of ground black pepper
- 2 tablespoons of tomato paste
For smoking:
- 1 small piece of charcoal
Preparation Method for Tilda Rice with Kofta:
Start by rinsing the rice and soaking it in warm water for about 10 minutes. To cook the rice, heat the butter and oil in a deep pot over medium heat. Add the cardamom, peppercorns, cloves, bay leaves, and cinnamon stick, stirring until fragrant.
Add the rice and stir it with the spices for 2 minutes. Then, pour 4 cups of warm water into the pot and add the salt. Bring it to a boil on high heat for about 3 minutes, then reduce the heat, cover the pot, and let it simmer for 12-15 minutes until the rice is cooked.
For the smoking process, heat a piece of charcoal until it becomes hot. Place a small bowl on top of the rice, add a few drops of sunflower oil into the bowl, and place the hot charcoal inside. Once the smoke starts rising, cover the pot immediately and leave it for about 5 minutes. After that, remove the charcoal and serve the rice on a platter.
For the kofta, mix the minced meat, salt, black pepper, cardamom, coriander, cumin, turmeric, chili powder, and paprika in a bowl. Shape the mixture into small balls.
Heat the sunflower oil in a pan and sauté the garlic and ginger until golden. Add all the diced bell peppers and sauté for a few minutes. Finally, add the salt, black pepper, tomato paste, and kofta balls. Pour 1 cup of water into the pan, cover, and let it cook on medium heat for about 7 minutes until fully cooked.
