  • 400 grams of beef liver, cut into cubes.
  • 100 grams of beef, cut into cubes.
  • 1 cup of mashed tomatoes.
  • 1 tablespoon of tomato paste.
  • ⅓ cup of vegetable oil.
  • 3 teaspoons of ground cumin.
  • 1 teaspoon of hot red pepper.
  • ½ teaspoon of black pepper.
  • 1 teaspoon of salt.
  • 3 cloves of garlic, minced.
  • 1 tablespoon of Tunisian harissa.

For Garnishing:

  • ½ cup of finely chopped parsley.

Method of Preparation:

Step 1: Preparing the Beef Liver

Place the beef liver cubes in a pot with plenty of hot water and let them soak for about 20 minutes. This will clean the liver from any remaining blood residue.

Step 2: Cooking the Beef

In a separate pot, heat the vegetable oil over medium heat. Add the beef cubes and stir occasionally until they turn a dark color.

Step 3: Adding the Spices and Tomato

Season the beef with black pepper, hot red pepper, and salt. Add the tomato paste and mashed tomatoes, stirring the ingredients together. Let the mixture cook for about 5 minutes, stirring occasionally.

Step 4: Adding Garlic and Harissa

Add the minced garlic and Tunisian harissa to the pot. Pour in enough water to cover the ingredients, then reduce the heat to low, cover the pot, and let the mixture simmer for about 40 minutes, allowing the sauce to thicken.

Step 5: Adding the Liver

After cleaning the beef liver thoroughly, add it to the sauce. Stir the ingredients together until well combined.

Step 6: Final Cooking

Increase the heat to medium and let the mixture cook for another 20 minutes, or until all the ingredients are fully cooked.

Step 7: Adding Cumin

Sprinkle the ground cumin over the dish and stir it into the mixture until it’s well incorporated.
