Turkish Dondurma – Recipe and Preparation Method

Turkish Dondurma is a traditional dessert in Turkish cuisine, known for its delightful taste loved by all family members. This dessert is not only delicious but also nutritious, made with affordable ingredients that are readily available in most households. It's easy to prepare, requiring just 15 minutes for the ingredients and about 30 minutes for cooking. Ingredients for Turkish Dondurma:

  • 2 pieces of mastic, frozen for 5 minutes
  • ⅓ cup of powdered salep (orchid root powder)
  • 2 tablespoons of vanilla
  • 3 cups of fresh liquid milk
  • 1 cup of cooking cream
  • ⅔ cup of white sugar
For Decoration:
  • Ground cinnamon (optional, as desired)

Preparation Method for Turkish Dondurma:

  1. Grind the Mastic:

    • Take the frozen mastic and grind it into a fine powder. Set it aside.
  2. Prepare the Salep Mixture:

    • In a small bowl, mix the cooking cream, vanilla, and powdered salep. Stir the ingredients together until well combined and set the mixture aside.
  3. Cook the Dondurma:

    • In a large pot over medium heat, combine the liquid milk, ground mastic, and the prepared salep mixture. Stir all the ingredients continuously to prevent sticking.
    • Keep stirring for about 30 minutes until the mixture thickens and becomes smooth.
  4. Refrigerate:

    • Pour the mixture into a suitably sized tray. Cover the surface of the mixture with plastic wrap and cover the tray with another layer of plastic wrap.
    • Place the tray in the refrigerator to chill.
  5. Stir and Freeze:

    • After two hours, remove the tray from the refrigerator and stir the dondurma mixture. Return the tray to the fridge.
    • Repeat this stirring process every two hours, for a total of three times, then leave the mixture in the refrigerator overnight to fully set.
  6. Serve:

    • The next day, remove the tray from the refrigerator and cut the dondurma into medium-sized squares.
    • Sprinkle ground cinnamon on top for added flavor.
