Turkish Sha'biat – Recipe for Turkish Sha'biat – How to Prepare Turkish Sha'biat

Turkish Sha'biat is known for its delicious taste and the high nutritional value of its ingredients. It's also easy to prepare, taking no more than 90 minutes to make and bake. In this recipe, I will share the ingredients for six servings along with the preparation steps, hoping you enjoy this special Turkish dessert.

Ingredients for Turkish Sha'biat:

For the Syrup:

  • Cold sugar syrup (as needed)

For the Dough:

  • ½ cup of warm milk
  • ½ cup of warm yogurt
  • ½ cup of vegetable oil
  • 1 tablespoon of baking powder
  • ¼ teaspoon of table salt
  • 3 cups of white flour
  • ¼ cup of water

For the Filling:

  • 3 cups of liquid milk
  • 8 tablespoons of cornstarch
  • 1 tablespoon of semolina
  • 1 tablespoon of rose water
  • 1 tablespoon of orange blossom water

Preparation Steps for Turkish Sha'biat:

Preparing the Filling:

  1. In a pot, mix the liquid milk, semolina, cornstarch, rose water, and orange blossom water. Stir the ingredients until they are well combined.
  2. Cook the mixture over medium heat while stirring constantly until it thickens and forms a creamy consistency.
  3. Once ready, set the filling aside to cool. (You can substitute the cream filling with crushed walnuts, almonds, or pistachios if desired.)

Preparing the Dough:

  1. In a bowl, mix the warm milk, warm yogurt, vegetable oil, salt, baking powder, flour, and water. Knead the ingredients together until a smooth and firm dough is formed.

  2. Cover the dough and let it rest for 60 minutes to rise.

  3. Divide the dough into 16 equal small pieces. Dust each piece with cornstarch and roll each one into a small round disc.

  4. Sprinkle a little cornstarch on the first disc and place another disc on top. Repeat this process to create several layers of dough stacked together.

  5. Roll out the stacked dough layers like a sandwich and cut them into equally sized pieces.

  6. Roll each piece of dough slightly and place a suitable amount of filling in the center.

  7. Fold the dough into a triangular shape, similar to samosas, and repeat the process with the remaining dough and filling.

Baking the Sha'biat:

  1. Grease a baking tray with a little oil and arrange the folded Sha'biat pastries on the tray.
  2. Preheat the oven to 180°C (350°F). Once the oven is heated, bake the Sha'biat until they turn golden brown.
  3. Remove the tray from the oven and immediately pour the cold syrup over the hot Sha'biat.
