Vegetable kofta is a nutritious and delicious meal. Every 100 grams of vegetables in this dish contains approximately 59 calories, 2.35 grams of protein, and 2.4 grams of fiber.

Main Ingredients for Vegetable Kofta:
For the kofta mixture:
- 2 large potatoes
- 2 large carrots
- 1 cup of peas
- 1 stalk of green onion, finely chopped
- 2 tablespoons of finely chopped fresh cilantro
- 2 tablespoons of finely chopped fresh parsley
- 1 tablespoon of finely chopped fresh mint
- 1 teaspoon of mixed spices

- ¼ teaspoon of ground cinnamon
- ¼ teaspoon of paprika
- 2 cups of breadcrumbs
For frying:
- Sunflower oil
How to Prepare Vegetable Kofta:
Step 1:
Begin by boiling the potatoes in plenty of water without peeling them. Wash the potatoes and place them in the pot to boil. Once boiled, remove them from the pot and let them cool for a short time before peeling. Mash the warm potatoes and set them aside.
Step 2:
Peel the carrots, slice them into thick rounds, and boil them in water until they are soft enough to mash. Once done, mash the carrots into small pieces and set them aside to cool.
Step 3:
In a deep bowl, add the mashed potatoes, mashed carrots, peas, chopped green onion, cilantro, parsley, mint, mixed spices, salt, black pepper, cumin, paprika, chili flakes, and ground cilantro. Mix everything well using your hands until the mixture becomes a slightly coarse dough.
Step 4:
Form small, equal-sized patties from the vegetable mixture and place them on a tray. Refrigerate the patties for 15 minutes to allow them to firm up.
Step 5:
Meanwhile, prepare a wide bowl by adding the egg, salt, pepper, cinnamon, and paprika. Whisk them together until well combined. Place the breadcrumbs in another deep bowl.
Step 6:
Heat the sunflower oil in a pan over medium heat until hot. Dip each kofta patty into the egg mixture, then coat it with breadcrumbs. Fry the patties in the hot oil, flipping them after a few seconds to ensure both sides are golden brown.
Step 7:
Once cooked, transfer the kofta to a serving plate.
