For the Fenugreek Mixture:

  • 2 tablespoons of ground fenugreek.
  • ½ bunch of chives.
  • 3 cloves of crushed garlic.
  • 1 green chili pepper, chopped.
  • 1 red chili pepper, chopped.
  • 1 teaspoon of whole cumin seeds.
  • Salt to taste.

For the Meat:

  • 500 grams of meat, cut into cubes.
  • 2 medium-sized potatoes, cut into cubes.
  • Salt to taste.
  • 2 tablespoons of vegetable oil.
  • 3 cloves of crushed garlic.
  • 1 small onion, finely chopped.
  • 1 green chili pepper, chopped.

For the Tomato Sauce:

  • 1 medium-sized tomato, diced.
  • 1 tablespoon of vegetable oil.
  • Salt to taste.
  • 1 small onion, finely chopped.
  • 1 tablespoon of tomato paste.

How to Prepare Yemeni Fahsa:

  1. Soaking the Fenugreek:

    • Soak the fenugreek in water for about 2 hours.
  2. Preparing the Meat:

    • Heat the oil in a pressure cooker over medium heat.
    • Add the chopped onion and green chili pepper, stirring occasionally until softened.
    • Add the meat cubes, stirring occasionally until the meat changes color. Then, add the potato cubes and salt.
    • Cover the ingredients with water and bring the mixture to a boil.
    • Once boiling, cover the pressure cooker and cook for about 25 minutes until all the ingredients are fully cooked.
  3. Preparing the Tomato Sauce:

    • Heat the oil in a pot over medium heat, then add the chopped onion, stirring occasionally until softened.
    • Add the diced tomato, tomato paste, and salt. Lower the heat and stir occasionally until the sauce thickens.
  4. Preparing the Fenugreek Mixture:

    • Drain the fenugreek from the water and whisk it until it becomes creamy.
    • In a blender, add the chives, green and red chili peppers, crushed garlic, salt, and cumin. Blend until the ingredients are well combined.
    • Add the whipped fenugreek to the mixture and blend until fully incorporated.
  5. Final Preparation:

    • Shred the cooked meat and place it in a clay pot on the stove.
    • Add the tomato sauce mixture to the meat, stirring occasionally until everything is well combined.
    • Let the mixture simmer, then top it with the fenugreek mixture.
