Yemeni Yaghmish Recipe: How to Prepare This Delicious Dish
Yemeni Yaghmish is a savory dish known for its rich flavor and high nutritional value. It's relatively easy to prepare, taking about 30 minutes for preparation and 20 minutes for cooking. In this recipe, we’ll provide the ingredients for four servings, along with step-by-step instructions for making this delicious Yemeni dish.
Ingredients for Yemeni Yaghmish:
For the Dough:
- 500 grams of all-purpose flour
- ½ cup of ghee (clarified butter)
- 1 teaspoon of yeast
- ½ teaspoon of salt
- 2 eggs, beaten
- Water (as needed)
For the Filling:
- 500 grams of minced meat (beef or lamb)
- 1 medium tomato, finely chopped
- Salt (to taste)
- ½ teaspoon of black pepper
- 2 medium onions, finely chopped
- 1 teaspoon of mixed spices
- ½ teaspoon of ground cinnamon
- 1 teaspoon of chili powder
- ½ teaspoon of dried coriander
- 2 tablespoons of vegetable oil
- 2 eggs, beaten (for brushing)
Preparation Method for Yemeni Yaghmish:
Making the Dough:
- In a large bowl, mix the flour, yeast, and salt until well combined.
- Add the beaten eggs and ghee, then mix thoroughly.
- Gradually add water while kneading the dough until it becomes smooth and firm.
- Cover the dough with a cloth and let it rest until it doubles in size.
Preparing the Filling:
- In a pan, heat the vegetable oil over medium heat, then add the chopped onions. Sauté until they soften.
- Add the minced meat and stir for about 5 minutes until it's partially cooked.
- Add the chopped tomato, salt, black pepper, cinnamon, chili powder, mixed spices, and dried coriander. Stir the mixture until well combined.
- Lower the heat, cover the pan, and let it cook for another 5 minutes.
- Once done, remove from the heat and allow the filling to cool slightly.
Assembling the Yaghmish:
- Roll out the dough on a floured surface, cutting it into medium-sized circles.
- Place a tablespoon of the meat filling in the center of each dough circle.
- Fold the edges of the dough over the filling, sealing it into a closed parcel.
Baking the Yaghmish:
- Preheat the oven to 180°C (350°F).
- Grease a baking tray with a little oil, then arrange the Yaghmish parcels on the tray.
- Brush the tops of the dough parcels with the beaten egg.
- Place the tray in the preheated oven and bake for about 15 minutes until golden brown and fully cooked.
