Ingredients for Zucchini Taco Boats:
- Medium-sized zucchini (as needed – cut lengthwise into equal halves).
- 500 grams of ground beef.
- ½ cup of taco sauce.
- 1 teaspoon of cumin.
- 1 teaspoon of garlic powder.
- 1 teaspoon of salt.
- 1 teaspoon of hot red pepper.
- 1 teaspoon of paprika.
- ½ teaspoon of oregano.
- 1 small onion, finely chopped.
- 1 green bell pepper, finely chopped.
- ¼ cup of warm water.
- 2 large tomatoes, diced.
- ½ cup of shredded (light) cheddar cheese.
How to Prepare Zucchini Taco Boats:
- Scoop out the center of the halved zucchinis, leaving about 1 cm of flesh around the edges.
- Boil salted water and blanch the zucchini halves for one minute, then set them aside.
- Lightly coat a baking dish with some taco sauce, then place the zucchini halves in the dish.
- In a large pan over high heat, cook the ground beef, stirring occasionally until the liquids evaporate. Add salt, hot red pepper, paprika, cumin, oregano, and garlic powder, and mix well.
- Add the chopped bell pepper, onion, zucchini flesh, diced tomatoes, and water to the pan. Cover and let the mixture cook on low heat until it thickens.
- Fill the zucchini halves with the taco meat mixture and arrange them in the dish. Pour the remaining taco sauce over the stuffed zucchini.
- Sprinkle shredded cheddar cheese over the zucchini boats.
- Preheat the oven to 200°C (392°F), and once it reaches the desired temperature, bake the zucchini boats until all the ingredients are cooked through.
