Ingredients for Baked Coral Fish (Serves Four):
For the Fish and Potatoes:
- Vegetable oil for baking and frying.
- 1.3 kilograms of potatoes, diced into cubes.
- A small bunch of rosemary.
- 180 grams of sea asparagus.
- 3 garlic cloves.
- 1.2 kilograms of coral fish, cleaned and descaled.
- Juice of 1 lemon.
- 30 grams of butter.
For the Sauce:
- Olive oil for frying.
- 2 green onions, finely chopped.
- 1 garlic clove, minced.
- 2 tablespoons of white vinegar.
- 100 grams of butter.
- 2 tablespoons of heavy cream.
- A bunch of parsley, finely chopped.
- Tarragon leaves, finely chopped.
- Juice of 1 lemon.
How to Prepare Baked Coral Fish:
Prepare the Potatoes:
- Preheat the oven to 200°C (392°F).
- Add vegetable oil to a baking tray and place it in the oven to heat the oil.
- Remove the tray, add the diced potatoes, and toss them in the hot oil.
- Season with salt and black pepper, then return the tray to the oven and bake for 35 minutes, stirring occasionally.
Prepare the Sauce:
- Heat olive oil in a skillet.
- Add the chopped green onions and sauté briefly.
- Add the minced garlic and white vinegar, stirring for about 10 minutes.
- Whisk in the butter until fully melted and combined.
Combine the Ingredients:
- Remove the baked potatoes from the oven and transfer them to the skillet with the sauce.
- Add a small amount of rosemary, sea asparagus, and 2 garlic cloves. Stir gently.
Bake the Fish:
- Increase the oven temperature to its highest setting.
- In a clean baking tray, add olive oil, garlic, and rosemary. Toss to combine.
- Place the coral fish in the tray, season with lemon juice, and dot with 30 grams of butter.
- Bake in the oven for 15 minutes, or until the fish turns golden and is cooked through.
Finish the Dish:
- Remove the fish from the oven.
- Add heavy cream, parsley, tarragon, and lemon juice to the sauce mixture. Stir until well combined.
