  • 2 tablespoons of olive oil
  • 1 medium onion, chopped
  • 4 cloves of crushed garlic
  • 1½ teaspoons of ground cumin
  • 1 chicken bouillon cube
  • 2 cups of hot drinking water
  • 800 grams of cauliflower
  • Drinking water (as needed for boiling cauliflower and carrots)
  • 6 medium carrots, sliced into rounds
  • ¼ cup of fresh chopped cilantro
  • 1 teaspoon of freshly grated ginger
  • Salt to taste
  • Black pepper to taste

Preparation Method for Cauliflower and Carrot Tagine:

  1. Place the cauliflower in a pot of water over medium heat and parboil it (half-cook it), then remove and set aside.
  2. In a separate pot, add the carrot slices and cover with water. Boil until well-cooked, then remove and set aside.
  3. Dissolve the chicken bouillon cube in hot water and set the mixture aside.
  4. Heat the olive oil in a suitable pot, add the chopped onion, cilantro, and the parboiled cauliflower. Stir the ingredients together.
  5. Add the crushed garlic, grated ginger, cumin, salt, and black pepper to the mixture, stirring until well combined.
  6. Pour in the hot water with the dissolved bouillon cube, add the boiled carrots, and let the ingredients simmer until the liquids evaporate and all ingredients are fully cooked.
