  • 2 kg potatoes, peeled and sliced
  • 2 heads of cauliflower, cut into medium-sized pieces
  • 3 carrots, peeled and sliced
  • 2 chickens, cut into pieces
  • 2 onions, finely chopped
  • 3 cups rice, washed
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 5 cardamom pods
  • 3 bay leaves
  • 2 cups vegetable oil

How to Prepare Cauliflower and Meat Maqluba:

  1. Prepare the Vegetables:

    • Heat the vegetable oil in a large pot.
    • Fry the potato slices until lightly golden, then place them on paper towels to drain excess oil.
    • Fry the carrot slices in the same way and set aside.
    • Repeat the process with the cauliflower pieces until slightly golden.
  2. Layer the Ingredients:

    • In a deep pot, layer the fried potato slices at the bottom and around the sides.
    • Add the chicken pieces on top of the potatoes.
    • Layer the fried cauliflower and carrots over the chicken.
    • Add the washed rice on top, ensuring an even layer.
    • Cover the rice with a final layer of fried potato slices.
  3. Cook the Maqluba:

    • Pour hot chicken broth over the layers until the ingredients are fully submerged.
    • Add salt, black pepper, cardamom pods, and bay leaves for flavor.
    • Bring the pot to a boil over high heat, then reduce the heat to medium.
    • Cover and cook for about 30 minutes, or until the rice is tender and the chicken is fully cooked.
  4. Assemble and Serve:

    • Once cooked, remove the pot from the heat and let it rest for a few minutes.
    • Carefully invert the pot onto a large serving platter to reveal the layered maqluba.
