Chicken Roulade – Recipe and Preparation Method

Ingredients for Chicken Roulade:
- 1 kilogram of chicken breast (flattened with a meat mallet)
- Salt to taste
- 1 teaspoon of white pepper
- 1 tablespoon of black pepper
- 2 tablespoons of vegetable oil
- 2 tablespoons of butter
- 1 tablespoon of all-purpose flour
- 1 cup of hot drinking water
- 1 bay leaf
- 4 medium-sized onions, quartered
- 1 chicken bouillon cube
- 2 cups of chopped zucchini
- 1½ cups of peas
- 2 cups of chopped carrots
- 2 cups of green beans
Preparation Method for Chicken Roulade:
- Season the flattened chicken breasts with salt, black pepper, and white pepper.
- Roll up the chicken breasts into tight rolls and secure them with kitchen twine.
- Heat the vegetable oil in a suitable pot over medium heat. Sear the chicken rolls, turning them until browned on all sides.
- Remove the chicken rolls and set aside. Add the flour to the remaining oil and stir well with a wooden spoon until combined, then set aside.
- In a pressure cooker, add the chicken rolls, bay leaf, chicken bouillon, quartered onions, and hot water.
- Cover the pressure cooker and cook the chicken until done. Remove the chicken rolls and set aside.
- Add the flour mixture to the broth in the pressure cooker, stirring to achieve a thick, consistent sauce.
- In a separate pot, cover the carrots, peas, zucchini, and green beans with water, season with a pinch of salt, and cook until tender.
- Slice the chicken roulade into rounds, arrange on a serving dish, and serve with the cooked vegetables and sauce. Enjoy this flavorful dish with family or guests. Bon appétit!
